Assembling Your Pasta Machine

A pasta machine is an extremely helpful tool as it allows you to easily and quickly make whatever pasta shape you have in mind. Though it is simple to set up, let's go over the essential steps.

1️⃣ Attaching the Pasta Machine to the Table

First thing, you need to attach the pasta machine to your work surface. You don't want it to move and wobble around when you are making pasta! The machine comes with a special clamp that needs to be inserted in the bottom hole (near the base) and firmly attached to your table.

2️⃣ Using the Smooth Rollers

Regardless of the pasta shape you are making, you always start rolling the dough on the smooth rollers. There are 2 important parts of the machine that interact with the smooth rollers:

Thickness-adjustment knob. By turning the knob, the rollers move closer or farther apart. Each pasta machine brand has its own specifics and numbering system. However, when rolling pasta, you always start at the widest setting.

Hand crank. Insert the hand crank of the pasta machine into the hole by the smooth rollers and turn clockwise.

Flour your sheet of pasta before feeding it through the rollers to prevent it from sticking.

3️⃣ Using Fettuccine and Tagliolini Cutting Rollers

When you want to cut fettuccine and tagliolini with your pasta machine, simply attach the cutting roller. The fettuccine and tagliolini cutter has a fixed setting so you cannot change the width between the rollers (the thickness-adjustment knob moves the smooth rollers only).

Insert the hank crank in the fettuccine or the tagliolini hole and turn clockwise to use. We recommend using a pasta drying rack to hang the cut pasta or a stackable pasta dryer to place the nests of long pasta.
