Step 1: Decide the Amount of Pasta You Want to Cook

The amount of pasta you plan to eat will affect all other steps when cooking pasta. The serving size varies according to the type of pasta you are preparing.

Dry pasta. The serving is about 80-100 g (2.8-3.5 oz) per person.
Fresh pasta. The serving size about is 120 g (4.3 oz) per person. Consider that fresh pasta contains 25-30% of water (compared to dried store-bought pasta that contains only 10-12% of water). This is why the serving size is larger.
Stuffed pasta. The serving size for fresh pasta is usually 120 g / 4.3 oz per person, though this can vary for stuffed pasta. Often, when the shapes are large, rather than weighing the amount we count how many pieces we will each eat (for instance, 5 or 7 ravioli per person).

How many people are you cooking for? Then multiply by the serving size. For instance, in Italy a package of store-bought dry pasta weighs 500 g (17.6 oz) so for a family of 4-5 people, we would use the entire package.
