Store In the Fridge
You can store the entire pasta dough or the cut pasta shapes in the fridge for a maximum of 24 hours. If you made egg pasta, the dough will turn into a green-greyish color after 24 hours.
Entire dough. If you prepare the dough the day before for the day after, you need to store it in the fridge overnight wrapped in plastic.
Cut pasta shapes. If you cut out the pasta shapes, place them on a parchment-paper-covered tray and dust the pasta with coarse flour (semola flour) so that they do not stick to the surface or to each other. For this purpose, always remember to use a coarse flour. Fine flour would be absorbed by the dough, making it stick to the surface. Cover the tray with plastic wrap and place it in the fridge.
How About Stuffed Pasta?
You can store fresh stuffed pasta shapes in the fridge for just a few hours (on a parchment-paper-covered tray dusted with semola flour and covered). The reason is that the stuffing of the pasta gradually moistens the dough and breaks it, compromising the final result when boiled (the pasta falls apart and the stuffing floats in the water). So if you don't plan to cook your stuffed pasta shapes after you're made them, freezing is the best option.
