How to Store Gnocchi

Let's start off by saying that it's best to cook and serve your gnocchi right after you have prepared them. However, if you have made extra gnocchi and would like to serve them a little later on, here's how to store them.

In the Fridge for a Few Days

You can store raw, uncooked gnocchi on a lightly floured tray, covered with a clean tea towel in a cool and dry place for just a few hours. If you need to store them longer, then cook or freeze them.

If you want to serve your gnocchi the day after they are made, you should cook them first. You can then either drizzle them with oil so that they do not stick to each other or add them to your sauce. Whichever method you choose, once cooled, store the gnocchi in an airtight container in the refrigerator for up to 2 days.

If you are making the precooked flour gnocchi (like gnocchi alla romana, polenta gnocchi, gnocchi di farina), cut them out into shapes, place them in an ovenproof dish, cover them with plastic wrap, and store them in the fridge for up to 2 days. Then bake them in the oven.

In the Freezer for More Days or Months

Freezing is always the best way to store raw gnocchi. If you want to freeze small individual gnocchi, place them well-spaced apart in a tray lined with parchment paper or a floured cloth. Transfer them to the freezer for 2-3 hours to allow the gnocchi to freeze individually. Once they have completely frozen, gather the gnocchi in a freezer bag and store them in the freezer for up to three months until you are ready to use them. Remember to write the date on the bag.

When you want to cook your gnocchi, dip them in boiling water directly from the freezer. It will take a few more minutes for them to start to surface. Do not thaw your frozen gnocchi!
