We are sisters and we were born in Rome, Italy. We love everything about this beautiful city we are lucky to call home. The food, the people, the history, the culture, and even the chaos of Roman life. When we decided to follow our passions - Benedetta is a wine sommelier, an olive oil sommelier, and a professional cheese taster and Valeria is a trained pastry chef - we also decided to commit to sharing the many stories behind traditional Italian dishes and ingredients. This course on the Roman recipes we love is very special to us and we are happy to be sharing it with you.
Cook and Eat Like a Roman
We are from Rome and our local ingredients and dishes are part of who we are. Starting from the 2 key ingredients of Roman cuisine, guanciale and Pecorino Romano, we'll guide step-by-step through the making of carbonara, cacio e pepe, amatriciana, and gricia pastas. We have included 2 local appetizers and the Roman-style artichokes our grandmother used to prepare. With the recipes of semolina gnocchi, saltimbocca alla romana, chicken cacciatore, and Roman tripe you are ready to surprise your family and friends with a full Roman dinner menu. All dishes have been paired to an Italian wine by our sommelier Eric.
